Zuchini with Ground Lamb

1 lb. ground lamb
1 onion, diced
2 cloves garlic, diced
1 shallot, diced
2 tablespoons olive oil
1 teaspoon salt
3 medium zuchini, sliced
8 oz. tomato sauce
1 teaspoon basil
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon pepper

Steps:

  1. In a sauté pan over medium heat soften onions, garlic and shallot in olive oil, about 5 minutes.
  2. Add lamb and brown. Add zucchini and tomato sauce and simmer for 5 minutes.
  3. Add spices and continue to simmer until zucchini is softened, about 5 minutes.
