Spicy Almonds

Makes 2 cups

2 cups whole almonds, blanched
3 tablespoons peanut oil
1⁄2 cups plus 1 tbs. sugar
1 1⁄2 teaspoon salt
1 1⁄2 teaspoon cumin
1 teaspoon hot pepper flakes
1 tablespoons sugar

Steps:

  1. Heat oil in heavy fry pan over medium high heat. Add almonds and sprinkle with 1⁄2 cup sugar. Sauté until almonds become golden brown and the sugar has caramelized.
  2. Remove almonds from pan and toss in a bowl with a mixture of the salt, cumin, pepper flakes and remaining sugar. Pour onto cookie sheet aiid break apart
  3. Store in tightly covered jars to keep out moisture
