Spicy Almonds
Makes 2 cups

whole almonds, blanched |
3 tablespoons |
peanut oil |
1⁄2 cups plus 1 tbs. |

1 1⁄2 teaspoon |
salt |
1 1⁄2 teaspoon |
cumin |
1 teaspoon |
hot pepper flakes |
1 tablespoons |

Steps:
- Heat oil in heavy fry pan over medium high heat. Add almonds and sprinkle with 1⁄2 cup sugar. Sauté until almonds become golden brown and the sugar has caramelized.
- Remove almonds from pan and toss in a bowl with a mixture of the salt, cumin, pepper flakes and remaining sugar. Pour onto cookie sheet aiid break apart
- Store in tightly covered jars to keep out moisture
