Stuffed Green Peppers

3 or 4 servings

4 green peppers, large
1 1/2 lb. ground turkey or beef
2 cloves garlic, diced
1/2 teaspoon dry mustard
1 teaspoon basil
1 teaspoon pepper
2 tablespoons (optional) parmesan cheese
2 tablespoons olive oil
1 onion, diced
1 shallot, diced
1 teaspoon oregano
1 teaspoon salt
1 teaspoon onion salt

Steps:

  1. Preheat oven to 375°
  2. Cut off tops of peppers. Remove stems and dice tops. Remove seeds and white veins from inside peppers. Parboil peppers in boiling water for 3 to 4 minutes until peppers are softened but still hold their shape.
  3. In a sauté pan soften onion, shallots and garlic, 5 minutes. Add turkey or beef and brown. Stir in diced green pepper and spices.
  4. Stuff peppers with sauté mixture and top with Parmesan cheese. Place peppers in a baking dish and bake for 20 minutes.
