Stuffed Green Peppers

Steps:
- Preheat oven to 375°
- Cut off tops of peppers. Remove stems and dice tops. Remove seeds and white veins from inside peppers. Parboil peppers in boiling water for 3 to 4 minutes until peppers are softened but still hold their shape.
- In a sauté pan soften onion, shallots and garlic, 5 minutes. Add turkey or beef and brown. Stir in diced green pepper and spices.
- Stuff peppers with sauté mixture and top with Parmesan cheese. Place peppers in a baking dish and bake for 20 minutes.
