Butterflied Leg of Lamb
We enjoy this way of serving lamb, and it is also a hit with company. It saves a lot of time if you ask your butcher to butterfly the leg for you. This is great either in the broiler or on the BBQ.

1/4 cup |
olive oil |
3 teaspoons |
kosher salt |
4-5 cloves |
garlic, cut into slivers |
2 tablespoons |
rosemary |
1 teaspoon |
back pepper |
Steps:
- Using a paring knife cut slits to insert garlic slivers all through lamb on both sides.
- Mix olive oil, rosemary, salt and pepper and rub all over lamb.
- Refrigerate for 1 to 2 hours.
- One-half hour prior to the start of cooking, remove lamb from refrigerator.
- Place lamb in broiler and broil on first side for 15 minutes. Turn and broil for 10 more minutes.
- Cover with foil and let rest for 10 minutes. Slice and serve.
