Butterflied Leg of Lamb

We enjoy this way of serving lamb, and it is also a hit with company. It saves a lot of time if you ask your butcher to butterfly the leg for you. This is great either in the broiler or on the BBQ.

8 to 10 servings

1 leg lamb, butterflied
1/4 cup olive oil
3 teaspoons kosher salt
4-5 cloves garlic, cut into slivers
2 tablespoons rosemary
1 teaspoon back pepper
Recipe

Steps:

  1. Using a paring knife cut slits to insert garlic slivers all through lamb on both sides.
  2. Mix olive oil, rosemary, salt and pepper and rub all over lamb.
  3. Refrigerate for 1 to 2 hours.
  4. One-half hour prior to the start of cooking, remove lamb from refrigerator.
  5. Place lamb in broiler and broil on first side for 15 minutes. Turn and broil for 10 more minutes.
  6. Cover with foil and let rest for 10 minutes. Slice and serve.
