We first had this terrific salad at a buffet dinner party at Thania and Tony’s. It is just great! It is important that the ingredients be of the very best taste, especially the tomatoes and the Feta cheese. They control the salad’s flavor.
About 4 servings
1 cup
tomatoes
1 cup
green pepper
1 cup
peeled cucumber
1 teaspoon
oregano
4-6 teaspoons
olive oil
1/4 lb.
finely crumbled feta cheese
to taste
salt and pepper
Steps:
Evenly chop about 1 cup each of tomatoes, green pepper and peeled cucumber. Chop should be less than 1/2 inch.
After chopping tomatoes, lightly salt and let drain in strainer 20 minutes then mix with green pepper and cucumber.
Stir in, to taste, 1 teaspoon oregano, 4-6 tablespoons of excellent extra virgin olive oil, 1⁄4 pound finely crumbled Feta cheese, salt and pepper.
