Sesame Soba Noodles

6 to 8 servings

8 oz. Soba noodles (oriental section)
2 tablespoons sesame oil
1 tablespoon Thai fish sauce
2 teaspoons fresh ground ginger
1 tablespoon fresh lime juice
1/4 cup sesame seeds, lightly toasted
2 tablespoons soy sauce
2 tablespoons canola oil
2 tablespoons rice wine vinegar
2 teaspoons garlic, finely minced
1 tablespoon Mirin (oriental section)
Recipe

Steps:

  1. Cook Soba noodles according to package instructions.
  2. For marinade combine and whisk together remaining ingredients except sesame seeds.
  3. When Soba noodles are cooked, drain and rinse in cold water. Immediately mix well with marinade and add sesame seeds.
  4. Chill in refrigerator for 1 to 2 hours before serving. Stir two to three times.
