Heat wine and butter together in a saucepan until the butter is melted. Stir.
Preheat oven to 450°.
Rinse chicken after brining and pat dry.
Cut lemons in half and squeeze 1 lemon on outside of chicken and rub thoroughly. Squeeze other lemon inside and put squeezed lemons inside chicken. Mix spices and rub over chicken and between the breast meat and its skin. Rub all over with butter.
Tuck chicken wings underneath. Place chicken in roasting rack breast side down. Place rack in heavy roasting pan and place in oven.
Roast for 30 minutes. Turn chicken, breast up. Reduce oven to 350° and roast for additional hour or until temperature of 160° is reached on thermometer placed in breast.
