Spritz

As a general rule all Swedish cookies are baked until just barely browned.

2 1/2 cups flour, sifted
2 sticks butter, unsalted
1 teaspoon almond extract
1/2 cup sugar
2 egg yolks

Steps:

  1. Preheat oven to 350°
  2. Cream together, until softened, butter and almond extract.
  3. Gradually add sugar. Creaming until fluffy after each addition.
  4. Add egg yolks individually, making sure to thoroughly beat in each egg.
  5. Add flour in fourths. Blend thoroughly after each addition.
  6. Fill a cookie press about two thirds full. Following manufacturer’s directions, from cookies of varied shapes directly onto cookie sheets. Rings or “S” shapes are traditional.
  7. Bake for 12 to 15 minutes until a light golden yellow. Remove to cooling rack and cool completely.
