Spritz
As a general rule all Swedish cookies are baked until just barely browned.
2 1/2 cups |
flour, sifted |

butter, unsalted |
1 teaspoon |
almond extract |

Steps:
- Preheat oven to 350°
- Cream together, until softened, butter and almond extract.
- Gradually add sugar. Creaming until fluffy after each addition.
- Add egg yolks individually, making sure to thoroughly beat in each egg.
- Add flour in fourths. Blend thoroughly after each addition.
- Fill a cookie press about two thirds full. Following manufacturer’s directions, from cookies of varied shapes directly onto cookie sheets. Rings or “S” shapes are traditional.
- Bake for 12 to 15 minutes until a light golden yellow. Remove to cooling rack and cool completely.
