Double Chocolate, Chocolate Chip Cookies

Makes about 30 cookies

1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups old-fashioned rolled oats
2 sticks unsalted butter, softened
3/4 cup sugar
1/2 cup light brown sugar, firmly packed
1/4 cup Nestle’s Quik powder
2 eggs
1 teaspoon vanilla
12 ozs. mini semisweet chocolate chips

Steps:

  1. Preheat oven to 350°.
  2. In a bowl sift together flour, baking soda, and salt. Stir in oats.
  3. In an electric mixer beat butter with sugars until light and fluffy. Beat in Quik until well combined.
  4. Add the eggs, one at a tune, beating well after each addition. Beat in vanilla.
  5. Add flour mixture, beating until just combined; stir in chips.
  6. Arrange rounded tablespoons of dough about 2” apart on ungreased cookie sheet. Bake in batches in middle of oven 12 minutes or until golden.
