Nantucket Morning Glory Muffins

Makes about 40 2" muffins

2 cups flour
1 1/4 cups sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
2 cups carrots, grated
1/2 cup raisins
1/2 cup pecans or walnuts, chopped
1/2 cup coconut
1 apple, pared and grated
3 eggs
1 cup vegetable oil
2 teaspoons vanilla
Recipe

Steps:

  1. Preheat oven to 350°.
  2. Sift dry ingredients together. Stir in carrots, raisins, nuts, coconut and apple.
  3. Beat together the eggs, oil and vanilla. Stir into the ingredients until blended.
  4. Spoon batter into well-greased muffin cups, filling to the top.
  5. Bake for 35 minutes. Let cool in tins on rack for 5 minutes. Muffins freeze well.
