Lunch Rolls

Surely you remember these rolls. Your mother used to make your sandwiches with them.

Makes 10 rolls

1 pkg. dry yeast
1 cup water, warm
1 teaspoons sugar
1 1/2 teaspoons salt
1/4 cup olive oil
3 1/4+ cups flour
to taste kosher salt
to taste poppy/sesame/caraway seeds

Steps:

  1. Mix water and yeast. Let stand 5 minutes to proof. Add remaining ingredients and mix. Let stand 10 minutes.
  2. Knead until smooth and elastic. Oil a bowl and turn dough in bowl to cover with oil. Cover bowl with towel, let rise to double; about 1 1/2 hours.
  3. Form into 10 rolls. Oil the sides of the rolls. Brush tops with egg white.
  4. Sprinkle with Kosher salt and any seed you desire, such as poppy, sesame or caraway.
  5. Bake in 375° oven until browned, 20 to 25 minutes.
